Vegan Meringue

Made from pointer from as inspiration.


  • Juice from a can of chickpeas
  • 1 cup sugar
  • Kitchenaid or other automatic whisking machine


  1. Put chickpea canning juice in mixer bowl.
  2. Whisk/whip until soft peaks.
  3. Slowly add cup of sugar to mix while continuing whisking.
  4. Cook in dollops on parchment of silpat.
  5. Bake at 250F for about 1 hour. Check if you smell burning sugar.
  6. Remove and serve as you like.
