Quick Preserved Lemons

  • 1 cup water
  • 2 tablespoons kosher salt
  • 4 small Meyer lemons, washed and quartered


  1. Combine water and salt in a small saucepan; bring to a boil.
  2. Add lemons
  3. Cook 30 minutes or until liquid is reduced to 1/2 cup and lemon rind is tender.
  4. Remove from heat; cool to room temperature.
