In the continuing quest to get a repeatable, high quality, hard-cooked egg, we bring you now the Steamed Egg. From Serious Eats.

Ingredients:

  • Uncooked eggs in shell
  • Water for steaming
  • Water for cooling
  • Ice for cooling

Equipment:

  • Steamer

Method:

  1. Put about 1" of water in your steamer and bring it to a boil.
  2. Put your eggs in the steamer basket and, when the steamer comes to a boil, put the basket on/in the steamer.
  3. Steam for 10 minutes.
  4. Prepare a bowl with ice water. When your eggs are done, cool them in the ice bath, and peel them there too - the water will help you peel the eggs cleanly.
